The Value Field Settings control how numbers in the Values area are summarized (Sum, Count, Average, Min, Max, etc.).

Value Field Settings determine which aggregation Excel applies to the field you drop into the Values area of a PivotTable, changing what number the pivot shows for each row/column intersection.
